Happy 53rd Birthday, Singapore*!
I miss having a good prata for breakfast, whether it is crispy or chewy. For now, I can only make do with the memories of the Prata man with his flying dough, slapping and stretching, flipping and flapping.
Used colloquially in the ‘nimble, practical, and dynamic’ Singlish, ‘prata’ means to flip-flop on decision or flexibility with information – just like how the dough would end up in the hands of a roti prata chef, crispy and soft at the same time!
